Well, it could be for a number of reasons.
People are fundamentally different.
We don't see eye to eye because we simply don't have the same eyes.
Our eyes construct our own understanding of the world. That is called perception.
We don't see eye to eye because we don't perceive the subject the same way.
It's because perception is never about the subject, it's always about us.

And we are all different.
We all have specific genetics, education, experiences and knowledge.
Perception is therefore a function of all of those things.
Perception = F(identity) = F(genetics,education,experiences,knwoledge)
Those differences make us see things that other won't see or see differently.
We also all have blindspots called biases.

Most of us aren't aware of our biases. That's why they are called that way.
Learning about them is useful and can be associated with your "knowledge" part of your identity.
